CASTEL SALLEGG WINERY

The modern story of the ancient Castle Sallegg starts in 1851: Archduke Rainer of Austria, Viceroy of the Lombardy and Veneto purchased the castle and surrounding wine-growing estates in that year.  Continued ownership descended from Prince Heinrich Campofranco to the Counts von Kuenburg. The fine cellars in the castle are testament of landed gentry that has always connected castle living with wine creation.

The Kaltern – Preyhof vineyard is located 550 meters above sea level, has calcareous soil, porphyry gravel and more reddish Gardena Valley sandstone soil with sand mixed with lime content.  The nearby Lake Caldaro provides roundness and softness to the fruit, which is trellised using the Guyot method.

Region: Alto Adige

Pinot Grigio

Vinification and Maturation:

This wine is 100% Pinot Grigio (various clones) and the extensive apple orchards on the estate give this wine an unmistakable unique fragrance.  The grapes are softly pressed in whole bunches and undergo static, cold, filtered settling then controlled fermentation in stainless steel tanks at low temperatures. The juice matures for approximately 4 months in high-grade steel tanks.  The wine is bottled in the Spring after the harvest and aged a minimum of 3 months before release.


Tasting Notes:

Color: Classic bright yellow with tints of green

Bouquet: Fresh apricots, ripe plums and slight minerality

Flavor: Full bodied, rich yet fresh with crisp acidity and just a hint of lime peel

Serving Suggestions: Ideal partner of fine fish dishes, seafood, vegetable dishes, salads and antipasti


Pinot Bianco

Vinification and Maturation:

This wine is 100% Pinot Blanco. After harvests the grapes go through low-temperature clarification and controlled cool fermentation at 15-18 degrees Celsius.  Majority of the wine is aged in stainless steel tanks for 4 months, where the other 5% of the wine is fermented and stored in barrique casks


Tasting Notes:

Color:  Pale, yellow color with light, greenish tones

Bouquet: Fresh aroma of citrus, fresh hazelnuts and rip apples with undernotes of elderflower and pineapple.

Flavor: Clean and fresh on the palate with a well-balanced acidity

Serving Suggestions: Great with fish and seafood, pasta dishes, and vegetable dishes 


Cuvée Elisa

Vinification and Maturation:

Manual harvesting of the individual grape varieties. Gentle pressing and pre-clarification by sedimentation. Fermentation under controlled temperature in stainless steel tanks, blending of the individual components followed by ageing on the fine lees.


Tasting Notes:

Color: Light bright straw yellow

Bouquet: Delights with notes of fresh grass and fruit aromas of apple, grapefruit and ripe apricot

Flavor: The cuvée is lively and fresh with a well-integrated acidity, pleasant mouthfeel and good length

Serving Suggestions: Ideal as an aperitif or with antipasti of fish and vegetables, pasta dishes, goat’s cheese


Cuvée Rénier

Vinification and Maturation:

Manual harvest and selection of the grapes. Destemming and mash fermentation under controlled temperature in stainless steel tanks. After malolactic fermentation, ageing in barriques and stainless steel tanks for 12 months. Assemblage 2 to 3 months before bottling.


Tasting Notes:

Color: Intensive ruby red

Bouquet: A fresh fruit bouquet of strawberry, blackcurrant and ripe blueberry

Flavor: Inviting on the palate with precise tannins and a playful freshness and fullness as well as compact fruit

Serving Suggestions: Ideal with speck or bacon, mature cheese and sausage, delicately spiced vegetable, pasta and meat dishes
