CORTE SAIBANTE WINERY

A modern winery surrounded by vineyards and designed with the latest technological standards. Ready to open its doors to present their products: Valpolicella Classico, Valpolicella Superiore, Ripasso and Amarone della Valpolicella.


The winery is wide and well-organized, divided in three areas for each process of the winemaking. The first area is dedicated to the sorting of the grapes after the harvesting, The second area is dedicated to the vinification process: provided with both a hard and a soft press to guarantee the best results while pressing the dry grapes of Amarone and later used for the grape’s peelings that will be part of the re-fermentation of Ripasso wine. The third area is dedicated to fermentation, provided with the last generation of tanks equipped with the Ganimede system, which allows tight control of process parameters during the fermentation process.


There are two cellars, one is located part in the modern side of the winery, the second in the charming basement of the ancient Villa Saibante, a few hundred meters away. The wood aging process happens in French oak wood barrels of different sizes and peculiarities.

Their philosophy has always been aimed to emphasize the terroir and the eco-sustainability.

Valpolicella Superiore

Vinification and Maturation:

Manual harvesting of the grapes anf short drying of grapes. The fermentation with maceration lasts for 10 days at the controlled temperature (22°/24°) in inox steel tanks. Later the wine is transferred in steel tanks for the malolactic fermentation

Aging: 12 months in wood barrels and then 7/8 months in steel thanks


Tasting Notes:

Color: Ruby red color with burgundy reflection.

Bouquet: Intense cherry perfume.

Flavor: Full-bodied, and fruity.
